Poached Egg with Saucí Verde

There are a lot of egg recipes that are perfect for Saucí Romesco, but we wanted to give a little nod to how good Saucí Verde is with eggs too!

Simply layered with tomato and avocado and maybe a sharp cheddar if you like, it’s the perfect home for a poached egg. Saucí Verde can be spread on the toast, whisked with the avocado, or simply served on the side.

Below on the right is a previous shot of a similar morning from last summer. At a Farmer’s Market that week we did a trade with Moxie Bread (Louisville) whose gorgeous bread became the toast for this dish.

Ingredients:

  • your favorite toast
  • half an avocado, sliced
  • two slices of tomato
  • 1 egg for poaching
  • Salt, pepper to taste
  • 1-2 tbsp Saucí Verde

I’m going to leave it to you to find your favorite poaching method… If I get a chance I’ll write up a more thorough description here.

Begin the poaching process, make your favorite toast, layer it with tomato and avocado, then lay your poached egg on top! Sprinkle with fresh ground pepper and salt, and add a spoonful of Saucí Verde to the side.
